Hillbilly Elegy Recipes from Anne Hill
Pimento Cheese
1 Block of Cracker Barrel brand extra sharp cheese (10 oz.)-Grated
1 block of Cracker Barrel brand Vermont Sharp White (10 oz.)-Grated
1 jar of pimientos-do not drain-(I used the smaller jar of two sizes at Meijer’s)
1/3 cup mayonnaise
½ tsp of cayenne pepper, if desired (I just sprinkled a little on top as I’m not into spicy hot stuff)
Grate the 2 blocks of cheese and combine with mayo and jar of pimientos undrained
. Cayenne is optional.
Amish Apple Pie
1 unbaked pie shell and 1 heavy brown paper bag
Preheat oven to 400 degrees
Filling:
7-8 medium apples (Spys or Jonathans) pared and sliced. Fill pie shell with slices of apples.
Mix together and sprinkle over top of sliced apples.
DO NOT mix with apples.
½ cup sugar 1 Tbsp flour
1 tsp cinnamon Dash of nutmeg a little lemon juice (optional)
Topping
:
½ cup sugar
½ cup flour
1 stick of butter
Combine sugar and flour, then cut in butter until crumbly. Sprinkle over top of the pie. Slip into brown grocery bag, so the bag rolls up on the side. Place in middle of oven so that the bag doesn’t touch the sides or top of the oven. You may have to remove the top rack. Bake 1 hour.
Take out and open bag carefully

Watch for steam! Remove pie from bag so it doesn’t bubble over the edge.
